Living on junk!

I know to be healthy I should eat well be just can't be bothered. Seem to be living off tea,toast and biscuits. I can't drive due to judgement and vision problems, hubbie is off tomo so will take me shopping but can't be bothered to write a list or do a meal plan. Any ideas. For chep, easy to prep healthy meals which don't produce lots of washing up? It seems that lack of energy and total brain fog are against me. Was going to have a microwave jacket spud, with leftover chilli- from slowcooker earlier in week yesterday, but ended up with a sausage roll and packet of crips! Even then my son got them for me!

I know what you mean about the can't be bothered thing, I rarely can either. I'm well aware that if I put junk in, I'm only going to get junk out afterwards. I find that doing something with pasta is quite simple, you can prep the ingredients beforehand, then its just a case of chucking them into a pan to cook them, whack some sauce on the top and throw in some pasta that has been cooking, simples (or not, as I'm aware how much the heat affects me). As far as the shopping thing goes, you could always use http://www.mysupermarket.co.uk/ to compile a list of stuff you want/need, then you can either print out the list from the site or order it for home delivery :-) Hope thats helped a touch

A good one i have started eating is bulgar wheat salad. dead easy and takes 15 mins to make and the only wasjing up i have is the bowl to make it a jug for stock a lemon squeezer and cutting board and knife then a plate or bowl to eat it from. you need. 65g bulgar wheat 65g veg stock one red or orange pepper a couple of spring onions 1/4 of a lemon juiced some feta cheese a couple of fresh mint leaves soak the bulgar wheat in the stock in a bowl for 10 mins then add chopped pepper and onion add the feta and chopped mint. sprinkle black peppers to taste and lightly sprinkle some paprika over it. Serve up to eat and lightly drizzle with olive oil and enjoy.
